About The Position
Wynn Al Marjan Island is currently seeking an Senior Pastry Chef (Chocolatier) to join the resort’s Pastry Shop team.
The Primary Duties And Responsibilities Of This Role Are
- Provide overall leadership and strategic direction for the chocolate and confectionery function within the Pastry and Bakery department, overseeing and guiding a team of approximately seven pastry professionals.
- Plan, organize, and control daily chocolate production, workflows, and staffing to support restaurants, banquets, amenities, special events, and seasonal business requirements.
- Oversee the creation and execution of premium chocolate products, including bonbons, pralines, truffles, bars, showpieces, and decorative elements, ensuring precision, consistency, and flawless presentation.
- Ensure mastery and consistent application of advanced chocolate techniques, including tempering, moulding, enrobing, finishing, colouring, and storage to protect quality, texture, and shelf life.
- Establish, implement, and continuously maintain departmental standards, technical guidelines, and quality control procedures specific to chocolate and confectionery production.
- Drive innovation through chocolate focused menu development, seasonal collections, amenity concepts, and creative presentations in collaboration with the Executive Chef – Pastry Artist and Amenities.
- Lead and oversee structured training, skills development, and technical mentoring of the chocolatier team to elevate craftsmanship, consistency, and technical excellence.
- Ensure chocolate production aligns with operational volumes, service timelines, and luxury presentation standards across all outlets and events.
- Monitor labour utilization, production efficiency, inventory levels of chocolate and specialty ingredients, and product waste, supporting cost control, yield optimization, and budgetary objectives.
- Work closely with procurement and culinary leadership on the selection, specification, and handling of premium chocolate ingredients and specialty equipment.
- Ensure full compliance with all food safety, hygiene, and sanitation regulations, with particular focus on temperature control, allergen management, and product integrity.
- Lead by example in enforcing Wynn policies, grooming standards, and professional conduct within the chocolate and pastry environment.
- Act as a key contributor within the culinary leadership team, supporting operational planning, continuous improvement initiatives, and cross department collaboration.
- Represent the chocolate and confectionery function at an executive level, upholding Wynn standards, culture, and luxury brand expectations in all interactions.
- Maintain full control and accountability of chocolate section equipment and assets, ensuring correct use, care, and prevention of loss or damage.
- Lead preventive maintenance discipline by ensuring section equipment is kept clean, safe, and operationally ready, coordinating service needs through appropriate channels to avoid downtime.
- Drive production efficiency improvements through workflow optimization, batch planning, and waste reduction initiatives while maintaining luxury quality and finish.
- Conduct yield and output reviews to support cost control and consistency, ensuring recipes are executed to standard and results are measurable and repeatable.
- Ensure correct inter department transfer discipline where applicable, supporting accurate tracking and cost transparency for chocolate items produced for outlets and events.
- Lead daily section briefings/handover within the chocolate team to align priorities, deadlines, and outlet/event requirements, ensuring clear execution and accountability.
- Support and contribute to broader pastry leadership planning by providing operational updates, risks, and improvement actions relating to chocolate production, timing, and standards.
About You
- Formal culinary education with specialization in Pastry Arts and Chocolate / Confectionery.
- Proven experience in a senior pastry or chocolatier leadership role within a luxury hotel, resort, or high‑end culinary environment.
- Demonstrated ability to lead and develop a professional team in a high volume, quality driven operation.
- Advanced technical expertise in chocolate work, combined with strong organizational and leadership skills.
- High level of attention to detail, creativity, and commitment to excellence.
