The Bar Manager is responsible for leading and overseeing the operations of all bar outlets at Nobu Hotel Barcelona, ensuring compliance with Nobu standards and delivering an exceptional guest experience. This role combines operational management, financial control, and team development, with a strong focus on resource optimization and profitability.

Oversee daily operations to ensure full compliance with Nobu brand standards across all bar outlets. Monitor service quality and the guest experience, closely monitoring costs and providing justification for any variances. Resolve issues promptly and effectively. Oversee the planning of special events and anticipate schedule changes to ensure adequate operational coverage. Supervise the planning of special events and anticipate schedule changes to ensure smooth operations. Ensure and oversee the accurate management of guest accounts. Maintain effective communication with the kitchen and other F&B outlets to optimize service delivery. Monitor customer service and staff presence, ensuring the team remains attentive to operational needs at all times.
Analyze sales performance and trends to meet both international and local demand. Design special promotions, proactively update bar menus, and maintain accurate recipe documentation. Oversee the printing and review of beverage menus, removing underperforming items and replacing them with new offerings aligned with brand standards. Stay current with industry and consumer local market. Identify initiatives and partnerships to promote the bar and increase revenue. Develop and maintain strong relationships with key suppliers, renegotiating beverage agreements to secure the most competitive pricing. Ensure appropriate stock levels and that purchasing respects budget targets and consumption trends.
Responsible for recruitment, training, development, and promotion of the bar team, as well as the management of disciplinary actions when necessary. Ensure compliance with all legal, licensing, and health and safety requirements related to bar operations. Monitor product profitability and adjust as required to maintain or increase profit margins. Efficiently manage inventory levels and ordering of beverages and bar equipment. Organize stock counts and oversee the monthly inventory process. Prepare monthly reports required by the Corporate Beverage Director. Organize staff schedules to ensure efficient allocation of personnel based on business levels and seasonality across all outlets. Manage the annual vacation calendar to ensure adequate coverage during peak periods. Ensure staff are fully trained in cellar and storage management procedures, as well as opening and closing tasks, keeping the bar well stocked, clean, and all equipment in good working condition. Oversee bar and floor staff training in beverage knowledge.
Log and follow up on maintenance, housekeeping, or service‑related incidents in HUB OS, ensuring clear descriptions and proper categorization. Proactively engage with guests and resolve issues or complaints directly. Collaborate with Maintenance, Housekeeping, and IT teams to ensure timely resolution of reported issues. Ensure guest satisfaction through effective service recovery and compensation when necessary, documenting feedback for future improvements. Train the team on the use of HUB OS to report and track operational incidents.
Conduct daily walkthroughs and quality control inspections across all outlet areas. Collaborate closely with Kitchen, Stewarding, and Housekeeping to maintain cleanliness standards and ensure food safety compliance. Ensure that waste management and recycling protocols are followed in accordance with local regulations and brand standards.
