Job description

As Sommelier, you will play a pivotal role in shaping an unparalleled wine experience across our diverse dining offerings, including the newly launched Brasserie Constance, a refined yet inviting brasserie led by renowned chef Adam Byatt. Also working in the Lighthouse Social, private members club, you will have the creative freedom to curate an outstanding wine list that caters to a broad spectrum of tastes, from casual sips to fine dining indulgence.

More than just a venue, Fulham Pier is set to become a vibrant social hub—a place where Londoners, locals, and global visitors come together for unforgettable experiences. Whether it’s a relaxed brasserie lunch, an elegant wine-paired dinner, or an immersive tasting event, your expertise will enhance every moment.

Our extraordinary selection of food, drink, and entertainment includes pop-up dining, fine gastronomy, local theatre, outdoor gigs, jazz nights, art exhibitions, comedy clubs, book launches, film screenings, and even riverfront yoga. We are building a playground for the senses, and your role will be integral to bringing this vision to life.

Main Responsibilities
  • Curate and evolve a dynamic, high-quality wine list that complements Fulham Pier’s diverse dining concepts, including Brasserie Constance.
  • Engage with guests to offer expert wine pairings and elevate their dining experience.
  • Collaborate with Adam Byatt and our culinary teams to craft exceptional wine pairings that enhance our menus.
  • Lead wine education by conducting tastings and training sessions for staff to ensure best-in-class service.
  • Manage supplier relationships, stock levels, and inventory, ensuring a well-balanced and meticulously maintained wine selection.
  • Drive wine experiences through bespoke tastings, exclusive events, and guest engagement initiatives.
  • Stay ahead of trends to continuously innovate and enhance our wine program.
The Ideal Candidate

It is essential that you have previous experience of working as a Sommelier in a high end establishment. You will have the ability to adapt to changing customer preferences and stay updated with industry trends, ensuring a wine offering that is dynamic, high-quality, and tailored to different dining experiences.

You will have a strong background in delivering a high level of guest satisfaction through expert wine recommendations and a polished service experience.

You will have the confidence and panache to practice your craft in a way that contributes to the overall atmosphere of Fulham Pier, providing an elegant and remarkable experience for all guests.

You will also have:

  • Proven experience as a Sommelier in a fine dining or luxury hospitality setting.
  • A deep knowledge of international wines, regions, varietals, and pairing techniques.
  • Outstanding communication and storytelling skills, making wine accessible and engaging to all guests.
  • A creative and adaptable approach, embracing changing customer preferences and industry innovations.
  • Strong organisational skills to manage inventory, procurement, and cellar maintenance.
  • The confidence and charisma to craft an unforgettable guest experience.
