About the role of the Restaurant Chef

The Chef will oversee all aspects of food preparation, from traditional Mexican cooking techniques to modern interpretations, while ensuring that every dish meets our standards of excellence. A deep understanding of Mexican cuisine, ingredients, and culinary traditions is essential.

About the Restaurant Casa de Brasa

Casa de Brasa showcases the rich heritage and fresh flavors of Mexico. During the day, enjoy homemade dishes that evoke traditional tastes, all in a relaxed atmosphere by the pool. As night falls, the dinner menu elevates classic recipes with an innovative twist, taking you on an epic journey through Mexico’s unique landscape. It’s about discovering the cuisine of Baja California, highlighting the four essential pillars of Mexican cooking: tradition, the land, the sea, and corn.


What you will do:

Menu Development & Execution:

  • Maintain authenticity in flavors, presentation, and preparation techniques while introducing creative twists when appropriate.
  • Oversee the use of fresh ingredients such as herbs, chilies, and spices to bring out the true flavors of Mexican cuisine.
  • Develop seasonal and special event menus.


Kitchen Operations & Food Preparation:

  • Oversee daily kitchen operations to ensure efficiency and productivity.
  • Maintain high culinary standards, hygiene, and safety regulations.
  • Ensure proper portion control and adherence to recipes.


Team Leadership & Management:

  • Recruit, train, and manage kitchen staff.
  • Foster a positive and collaborative work environment.
  • Monitor performance and provide coaching for professional development.


Budgeting & Cost Control:

  • Manage food costs, inventory, and waste reduction.
  • Ensure profitability through effective cost management without compromising quality.
  • Maintain compliance with health and safety regulations.


What you bring:

  • Fluency in both Spanish and English is essential for effective communication within a bilingual team and with diverse clientele.
  • Bachelor’s degree in Culinary Arts or a related field is required to ensure a solid foundation in culinary principles and practices.
  • Minimum of 5+ years of experience in Kitchen Management Operations, including expertise in budgeting, food cost control, and process optimization to drive efficiency and profitability.
  • Proven track record as a chef in a Mexican restaurant or similar high-end culinary environment, demonstrating mastery of authentic Mexican cuisine and creativity in menu development.
  • Extensive knowledge of Mexican culinary traditions, with a deep understanding of regional dishes, cooking techniques, and ingredient sourcing.
  • Expertise in working with traditional Mexican ingredients, such as chilies, masa, fresh herbs, and exotic spices, while ensuring consistent quality and flavor.
  • At least 5+ years of experience working in a luxury hotel or similar upscale dining setting, where high standards of service and cuisine are expected.
  • Prior experience with the Birchstreet System is highly desirable for seamless kitchen and inventory management.
  • Proven ability to work proficiently with hotel systems, maintaining exceptional attention to detail and ensuring smooth kitchen operations in a fast-paced environment.
