The Role:

• Creating a cuisine that offers a fusion of various culinary aspects of the APAC region.
• Emphasizing the use of fresh, seasonal, and locally sourced ingredients in your dishes.
• Applying the fundamentals of menu engineering to menu planning, considering market and restaurant requirements, recipes, potential costs and profits, and availability of food products.
• Identifying and responding to food and food market trends for both hotel guests and the local market.
• Monitoring and analyzing the food offerings and products of competing restaurants and other hotels, using this information for effective competitive management.
• Motivating chefs to engage with market needs to ensure their products meet the requirements.
• Actively participating in Food & Beverage (F&B) marketing, including contributions such as promotional ideas for the department and hotel.
• Instructing the kitchen team regarding hotel activities and actively participating in the design through ideas and support.
• Involving the F&B service team regarding the food offer and possible changes or additions.
• Developing and implementing special event menus that reflect seasonal activities or ad-hoc events.
• Maintaining and updating recipes for your team's reference.
• Involving suppliers regarding new or alternative products for cost reasons or seasonal availability.
• Monitoring and analyzing guest feedback to ensure value for money while exceeding guest expectations.
• Having knowledge of current cuisine trends, both international and local, and the ability to capitalize on food trends through special events in restaurants/bars and function spaces.
