Job description

Job Responsibilities:

Responsible for monitoring cooking temperature and time to ensure that the products are cooked to the required temperature and held for the specified time. Follow the correct product specifications which are indicated on the recipe and pre-loaded into the Scada system.

Minimum Requirements:

  1. Minimum 2 years' experience in Manufacturing
  2. Must have experience working in the food industry as a cooker.
  3. Must understand lean principles.
  4. Exposure to a food manufacturing environment
  5. Exposure to World Class Manufacturing techniques.

Duties and Responsibilities:

Safety and Quality:

  1. Following all Nando's Feitoria safety rules and policies.
  2. Wearing safety equipment and PPE.
  3. Reporting all dangerous or unsafe behaviour to the manager.
  4. Never to engage in any unsafe act.
  5. Ensure all aspects for products to be produced in assigned work area meet critical quality factors, customer needs and acceptable standards as per shared production plan and shopware reports.
  6. Ensure PCD / Summary reports are populated accurately and on-time on shopware.
  7. % compliance to safety rules.
  8. Responsible for production to attain 5S standard in work area.
  9. Adhere to zero harm and zero alcohol tolerance safety principles.
  10. Identify ripping / slip hazard.
  11. Working with hot product / hot surfaces – burning hazard.
  12. Check set point temperature have been reached before taking samples.
  13. Cooker to raise job card if set points are not met.
  14. Record the time at which the sample is taken on the cooking record.
  15. Submit the sample to the QA Lab for analysis together with the recipe.

The recipe should have the following information: Date of production, production code, SAP batch number, material number and it needs to be signed off by the production group leader. Also attach pick slip to the recipe.

Operations and Equipment / Machine Usage:

  1. Take production run instruction (recipes) from the team leader for daily production run and execution.
  2. The cooking operator must ensure that the work area is always clean and dry.
  3. The operator must ensure that all pre-weighed ingredients and their weights correspond with the information on the recipe.
  4. The cooking procedure will be done automatically by the Scada.
  5. Cooking record must be completed when cooking of a batch starts.
  6. Records of the cooking temperature(s) and time(s) can also be printed out from the Scada system.
  7. Ensure that the steritainer is labelled with the following information: Product name, production code, date of production and line number.
  8. Cooker to check and verify all ingredients have been added, check water, oil and vinegar are being added by system.
  9. Responsible to notify Sanitation officer to start cleaning the pots after checking that the pots are empty.
  10. Responsible for reporting downtime on Shopware.
  11. Responsible to ensure safety, quality, productivity, and equipment effectiveness goals as per set KPIs.
  12. Report scrap levels daily and submit information to the team leader for review.
  13. Responsible production attains OEE score of 65% or plus in work area.
  14. Responsible for production to attain wastage score of 2% or less in work area.
  15. Responsible for production to ensure stock accuracy in work area.

Miscellaneous Tasks / Activities:

  1. Responsible for checking or verifying tools / parts, removing, and sending to maintenance for repairs.
  2. Capture production progress on shopware system accurately at start, during a stoppage / downtime and at the end of the job.
  3. Participate in all required inventory control activities, namely, cycle counts, and stock takes.
  4. Participate in The Nando's Feitoria (Operational Excellence) initiatives.
  5. Any other reasonable task assigned by the team leader or manager.
  6. Be prepared to work overtime when required.
