Executive Sous Chef - Conferencing & Events

Responsibilities

The Exec Sous Chef will:

  1. Assist the Executive Chef in managing all kitchen activities, ensuring efficient service during peak events.
  2. Oversee food preparation, ensuring high standards of quality, taste, and presentation.
  3. Develop and execute menus for large events, daily service, and special occasions.
  4. Ensure proper portion control and minimize food waste.
  5. Supervise and train kitchen staff, including chefs, cooks, and kitchen support.
  6. Assist in scheduling staff shifts to ensure adequate coverage during busy periods.
  7. Ensure the kitchen adheres to food safety, hygiene, and sanitation standards.
  8. Maintain compliance with local health regulations and Conference Centre policies.
  9. Ensure that all food storage and preparation meet safety guidelines.
  10. Manage inventory, ordering supplies, and controlling food costs while minimizing wastage.
  11. Ensure responsible sourcing of ingredients, prioritizing local, seasonal, and sustainable suppliers.
  12. Promote and adhere to the hotel’s sustainability goals, ensuring all kitchen operations align with efforts to reduce the carbon footprint.
  13. Collaborate with the procurement department to source quality ingredients at the best price.
  14. Communicate any anticipated shortages promptly to the Executive Chef.
  15. Ensure that all dishes leaving the kitchen meet the Conference Centre’s high standards for quality and presentation.

Requirements

The ideal candidate will have:

  1. Proven experience as a Sous Chef or Executive Sous Chef in a high-volume kitchen, preferably within the hospitality industry.
  2. Strong leadership and communication skills, with the ability to motivate and manage a large team.
  3. In-depth understanding of food safety, hygiene regulations, and kitchen equipment.
  4. Ability to work under pressure, especially during high-capacity events.
  5. Creativity and a passion for delivering high-quality food and dining experiences.
  6. Inventory management and cost analysis experience.
  7. Strong organizational and time-management skills.
  8. Ability to work long hours, including weekends and holidays.
