- Assist the Galley Manager in managing and training a team of galley staff, including chefs, cooks, and kitchen assistants
- Monitor and maintain food quality and presentation, ensuring that all dishes meet our standards and guest expectations
- Oversee inventory and ordering of food and supplies, maintaining accurate records and controlling costs
- Ensure compliance with all food safety and sanitation standards, conducting regular inspections and training staff as needed
- Collaborate with other departments, such as dining and housekeeping, to ensure smooth operations and guest satisfaction
- Assist with menu planning and development, taking into consideration guest feedback, dietary restrictions, and seasonal availability of ingredients
- Manage and troubleshoot any issues or challenges that may arise in the galley, communicating effectively with the Galley Manager and other department heads
- Foster a positive and productive work environment, promoting teamwork, open communication, and professional development for all galley staff
Qualifications:
- Minimum of 2 years of experience in a supervisory role in a high-volume kitchen, preferably in a cruise ship or hotel setting
- Culinary degree or equivalent experience in a professional kitchen
- Strong knowledge of food safety and sanitation regulations
- Excellent leadership and communication skills
- Ability to work in a fast-paced, dynamic environment and handle multiple tasks simultaneously
- Flexibility to work long hours and adapt to changing schedules and demands
- Fluent in English, both written and spoken
- Must be eligible to work on a cruise ship and travel internationally
Working Conditions:
The Assistant Galley Manager will work onboard a cruise ship, which may include long hours, varied schedules, and frequent travel. The work environment can be fast-paced and physically demanding, with exposure to heat, steam, and noise.
