Job description

Financial Returns

  • Assist Chief Steward to complete departmental production reports for management.
  • Assist Chief Steward to implement departmental annual budget and the setting of departmental goals.
  • Assist Chief Steward to manage a cost effective budget with measurable targets for department within the financial parameters set down by the hotel budget.
  • Assist Chief Steward to analyze variations from the budget effectively.
  • Assist Chief Steward to implement systems that measure the cost effectiveness of F&B operation.
  • Assist Chief Steward to implement procedures that track, report on, and control the running costs of F&B operation.

People

  • Assist Chief Steward to manage day-to-day F&B operation, plan and assign work, and establish performance and development goals for team members.
  • Assist Chief Steward to educate and train team members in compliance with brand standards, service behaviors, and governmental regulations.
  • Promote teamwork and quality service through daily communication and coordination with other departments. Assist sales, catering and banquet staff with banquets, parties and other special events.
  • Assist Chief Steward to implement other staffing/human resources-related actions in accordance with company rules and policies.

Guest Experience

  • Interact with outside contacts:
  • Guests – to ensure their total satisfaction.
  • Vendors – to order supplies and equipment and ensure best prices and quality.
  • Health Department and other regulatory agencies – regarding safety matters and kitchen inspections.

Responsible Business

  • Lead, teach, coach and inspire Stewards.
  • Ensure all stewards arrive for their shift on time, well-groomed and ready to work.
  • Assign work station to all stewards during line-up and pass on events and information.
  • Ensure that all stewards are following the proper procedures and standards set in place by the department and the hotel.
  • Responsible for the opening and closing shift.
  • Ensure that all kitchens are cleaned, organized and sanitized.
  • Ensure all daily tasks lists are completed.
  • Ensure inter-departmental communication and cooperation in the interest of better guest satisfaction.
  • Ensure that garbage & recycling removal is being done in a timely manner and according to the rules set by the hotel.
  • Assist in the correct usage of all chemicals within the department and outlets, including appropriate training in accordance with provincial WSH legislation.
  • Assist to record breakages and maintain par level for operation used.
  • Assist any outlets and culinary team with any kind of resource request.
  • Ensure all equipment is cleaned, maintained and properly stored after an event.
  • Attend and participate in departmental meetings.
  • Perform walkthrough with Assistant and Chief Steward on a regular basis.
  • Ensure all storage rooms are kept clean and organized.
  • Fill positions within the department when needed.
  • Foster an environment of cooperation within the department and between other departments within the hotel. Encourage participation and input from all colleagues while promoting professional work habits that will ensure that the department is being guided at all times by ICSRQ Mission, Vision and Values.
  • Have a proactive eye for detail and cleanliness.
  • Actively participate in hotel committees (Service Plus, Environmental, Learning, Health and Safety…).
  • Compliance with all safety regulations of assigned tasks, and ensure a clean and safe working environment with active participation in the hotel health and safety program.
  • Adhere to all environmental policies and programs as required.
  • Other reasonable duties as assigned.
  • Follow department policies, procedures and service standards.
  • Maintain a clean and safe work environment.

Accountability

Assists Chief Steward in maintaining food hygiene at all premises. Assists Chief Steward in supervising stewards in a luxury hotel with multiple food and beverages outlets and club lounge.
