Job description

We are seeking a talented and experienced Seafood Chef to join our team at a new high-end, fine dining Chinese restaurant. The ideal candidate will be passionate about preparing exquisite seafood dishes that highlight authentic Chinese flavors, while also introducing innovative culinary techniques. You will work closely with our culinary team to deliver exceptional dining experiences to our discerning clientele.

Key Responsibilities:
  • Seafood Preparation: Expertise in handling and preparing various types of seafood, including but not limited to lobster, crab, shrimp, scallops, fish, and shellfish, in line with Chinese culinary traditions and techniques.
  • Menu Development: Collaborate with the Executive Chef to design and develop a seasonal seafood menu that reflects the restaurant's high standards and the latest trends in fine dining.
  • Cooking Techniques: Mastery in a variety of cooking methods, including steaming, braising, stir-frying, and deep-frying, with an emphasis on preserving the freshness and delicate flavors of seafood.
  • Quality Control: Ensure the highest quality and freshness of seafood ingredients are maintained. Regularly inspect seafood deliveries and assist in ordering and maintaining inventory.
  • Team Collaboration: Work effectively with other kitchen staff to ensure smooth kitchen operations and that all dishes are prepared and plated to perfection.
  • Health & Safety: Adhere to all food safety regulations and cleanliness standards, ensuring the kitchen maintains a safe, hygienic, and efficient environment.
  • Customer Satisfaction: Ensure that all seafood dishes meet the highest standards, satisfying our customers with memorable dining experiences.
Requirements:
  • Experience: Minimum of 5 years of experience as a seafood chef, preferably in a fine dining or high-end Chinese restaurant setting.
  • Skills: Strong proficiency in Chinese seafood cooking techniques and knowledge of Chinese herbs, spices, and ingredients.
  • Passion: A genuine love and understanding of Chinese culinary traditions, particularly seafood dishes.
  • Creativity: Ability to develop unique, modern interpretations of classic seafood dishes while respecting the integrity of traditional Chinese cuisine.
  • Leadership: Ability to guide and mentor junior kitchen staff, maintaining a positive and collaborative work environment.
  • Communication: Strong communication skills to coordinate effectively with other chefs, kitchen staff, and front-of-house team.
  • Attention to Detail: An eye for precision in presentation, ensuring that dishes are both visually appealing and of the highest quality.
  • Physical Stamina: Ability to work long hours on your feet in a fast-paced kitchen environment.
  • Qualifications: Culinary degree or equivalent professional certification is preferred but not required.
Preferred Attributes:
  • Experience with high-end Chinese dining concepts and seafood-specific techniques.
  • Knowledge of current trends in the global culinary scene, especially with seafood.
  • Strong organizational skills and the ability to multitask under pressure.
