Food & Beverage Supervisor

Primary Responsibilities

Outlet Operations

1. Coordinate and assist in opening/closing duties and ensure that all settings are completed according to standards and procedures prior to the start of operation.
2. Ensure that all outlet checklist are completed, signed and recorded in file.
3. Assist management to supervise junior team members and casual labour under his/her leadership/section and to ensure that all tasks assigned/required in the outlet are carried out on time and according to instruction and departmental standards.
4. Take and record restaurant reservations/cancellations in accordance to departmental standards. Reconfirm reservations through phone calls or email on a daily basis.
5. Take food and beverage orders according to guest’s requirements and preferences.
6. Deliver food & beverage services in accordance to departmental standards and procedures.
7. Ensure that all food & beverage are served according to service standard.
8. Up-sell and promote food and beverage offers at every available opportunity in order to maximize sales revenue. Cross sell other dining venue when outlet is full.
9. Try to remember individual patron’s names and their preferences to extend a personalized service.
10. Apply necessary precautions with regards to the hotel food safety and hygiene standards (HACCP).
11. Collect food and beverage supply requisition, ensure that the stock collected is as per requisition.
12. Handle guests’ complaints and comments tactfully and efficiently. Report any complaints, incidents or other irregularities to management.
13. Supervise and assist in assigned work station’s activities and oversee the operation of outlet in the absence of management.
14. Assist other Food & Beverage outlets with their operations during peak times or when required.
15. Deliver and support outlet to achieve exceptional LQA Standards in the outlet.

Secondary Responsibilities

1. Liaise with department head on recruitment and review manning requirements.
2. Maintain complete knowledge of all food & beverage services, contents & preparation methods, outlets and hotel services/features.
3. Be well versed in hotel fire & life safety/emergency procedures.
4. Attend all briefings, meetings and trainings as assigned by management.
5. Report for duty on time wearing clean and complete uniform at all times.
6. Maintain a high standard of personal appearance and hygiene at all times.
7. Perform other reasonable duties assigned by the Management of the Hotel.
8. Support other outlets or provide lateral service to other departments when requested.

Knowledge and Experience

1. High School/GED equivalent/Diploma in Hotel Management or equivalent.
2. Minimum 2 years of experience in a similar capacity or supervisory level.
3. Has strong knowledge on beverage trends, fermentation, cocktails, zero alcohol and wines.
4. Excellent reading, writing and oral proficiency in English language.
   • Ability to converse bilingually English and other language.
5. Familiar in local legislation.
6. Proficient in MS Excel, Word, & PowerPoint.
