Job Responsibilities

  • Support the Executive Chef / Executive Sous Chef and the team in ensuring the efficient preparation for all aspects of kitchen operations.
  • Act as a coordination point for communication between Team Members, Executive Chef and Executive Sous Chef.
  • Establish grooming standards that adhere to company policies and industry standards.
  • Assist Executive Chef and Executive Sous Chef in the elaboration of menus, recipe cards, and plating guides.
  • Be responsible for food production, ensuring a controlled step-by-step preparation from delivery to guest plate.
  • Ensure the quality of food items according to established standards, including maintaining perfect sanitary conditions and applying the “First in First Out” kitchen best practice.
  • Monitor the production of food items to ensure compliance with prescribed recipes and specifications, adhering to standards of food presentation, production, and portioning controls.
  • Be hands-on in the timely pre-preparation before rush hours as well as for the next day’s “Mise en Place” requirements.

Job Requirements

  • Comply with and ensure hygiene policies are strictly adhered to on a daily basis, relentlessly checking and controlling cooks applying all standards in place.
  • Maintain a high standard of cleanliness and sanitation in and around all culinary work areas, ensuring that all colleagues clean their stations after every service.
  • Ensure safe and proper use of equipment at all times and instruct culinary colleagues accordingly.
  • Able to demonstrate a positive attitude and take pride in one’s work, reflected in the product produced for our guests.
  • Ensure timely reporting to work as per culinary department schedules and report any sickness or absence using the correct procedures.
