Job description
  • Assists other members of the kitchen brigade in ensuring that all day to day operational matters are handled on time and guest expectations are met.
  • Ensures utensils preparation and presentation in relevant food production area conform to the requisite standards.
  • Ensures that utensils are stored, prepared, and secured hygienically and safely.
  • Maintains standards of hygiene and cleanliness in all kitchen and related areas.
  • Ensures that mise-en-place and preparation procedures are correctly followed.
  • Supervises the duties of all stewarding employees.
  • Supervises the consumption of all chemicals/cleaning supplies on a daily basis.
  • Maintains equipment, such as dishwashers, ovens, and refrigerators in good working condition.
  • Ensures that the stewarding department meets all health and safety regulations.
  • Implements cleaning and sanitation procedures without exception.
  • Coordinates with culinary & service team to ensure smooth operations.
  • Controls & documents all outgoing equipment and ensures proper receiving upon return.
  • Prepares reports on daily cleaning checklist for review.
Qualifications

2 Years experience in Stewarding/Culinary in a Luxury Hotel.
