Responsible for enforcing our kitchen operational system and SOPs/processes, including developing new SOPs and improving existing ones.
Responsible for overall purchasing operation consisting of sourcing, selection and negotiation.
Manage & oversee daily operation of central kitchen activities, function, documentation, equipment, facilities, safety & health to ensure compliance.
Responsibilities:
Establish and manage manufacturing KPIs such as plant productivity, safety, quality, cost and delivery. Take corrective actions to achieve KPI as needed.
Provide leadership, support and guidance to team members to ensure that food quality, standard operating procedures, sanitation, inventory levels, food safety guidelines, productivity and customer service are met.
Estimate & control departmental costs to make sure budget within or below limit.
Develop production, material and qualities management policies & procedures.
Plan monthly, quarterly & yearly production schedules to increase productivity levels and reduce wastages.
Control and manage daily inventory of raw materials, semi-finished items and finished goods.
Analyze production data to identify and resolve any production issues.
Prepare periodic reports to update upper management on food production activities.
Collaborating with quality control team to establish and execute quality control processes.
Identify and mitigate risks in manufacturing operations that could negatively impact delivery of safe and quality product.
Manage Central Kitchen equipment and ensure that all equipment is properly maintained, repaired and replaced in accordance with each equipment’s specific requirements.
Recruit, train and manage factory workers, including developing SOPs where necessary.
Perform other ad-hoc duties as required by key decision-makers from time to time.
Requirements:
Degree in business administration, industrial management, logistics, or related field.
Minimum 8 years of food production management work experience, at least three years of work experience at manager level or above in the food production department.
Extensive knowledge of SOPs, GMPs and HACCP are preferred.
Experienced at developing and enforcing operational SOPs.
Considerable knowledge of food hygiene and kitchen management principles.
