Responsibilities:
Continually updates and reviews all food purchase specifications, par stocks, recipes, portion control charts, preparation and production methods to ensure productivity, efficiency and the highest possible standards at all times.
Controls requisition of all food supplies and equipment, both incoming and outgoing.
Attends daily F & B Briefings, monthly F & B Meetings and other meetings required for the position.
Immediately investigates any complaints on reported food poisoning, accidents or incidents and takes immediate corrective actions, as per hotel policy.
Establishes and implements an effective cleaning program with the Chief Steward.
Coordinates with Purchasing and Storeroom to determine the minimum and maximum food par stocks.
Directs outlets and banquet food setups and presentations, continuously reviewing and upgrading the standard.
Capable of standardizing recipes, including yield test for ingredients, method of preparations and presentations.
Establishes and implements an effective cleaning schedule to maintain high sanitation standards in the kitchen.
Conducts regular and scheduled market survey to determine the quality and market price of food supplies.
Requirements:
Candidate must possess at least Bachelor's Degree/ Post-Graduate Diploma/ Professional Degree in Food & Beverage Services Management or equivalent.
Required language(s): Bahasa Malaysia, English.
At least 5 years of working experience in the related field is required for this position. Experienced in chef management.
In touch with contemporary F&B concepts.
Agile and proactive in PR and marketing environment.
Personal and entertaining ability for and in innovative dining events.
Experience managing large complex operations with multiple outlets.
Experience and understanding of contemporary restaurant and banqueting concepts.
Strong organizational and administrative skills.
Highly developed financial and cost management ability.
Strong human resource skills, able to communicate effectively as well as train and develop team members at all levels.
Ability to consistently and continuously review existing products and to ensure frequent changes on seasonality and attractiveness of offerings made to customers.
