Responsibilities

Responsible for maintaining cost effective Catering and Janitorial Operations Offshore including maintaining a high standard of service and discipline.

Administration related to his department and ensuring the smooth flow of all paperwork between the office and facility.

Conducts Offshore Induction for all new recruits arriving on the rig and fills out the form confirming the recruit understands fully what is expected of him.

Attends all supervisors meetings in the morning, liaises daily with the client onboard the rig.

Plans weekly menus with the Cooks and submits to OIM for approval (if required).

Oversees and records the issuance of all dry and wet stocks.

Orders supplies weekly, making sure there are sufficient stocks for 2 to 3 weeks at any time.

Carries out fortnightly stocktakes together with the chief cooks.

Administers and supervises all his catering crew and maintains the discipline of the same.

Conducts and records daily toolbox meetings including weekly catering meetings dealing with Hygiene, Safety, Performance, etc.

Carries out daily inspections to ensure the Rig Cleaning Schedule is being followed and adhered to.

Carries out weekly hygiene inspections with the Medic and STO to ensure compliance with our Client’s expectations.

Follows Local laws and Regulations governing food preparation/handling procedures.

Oversees all Company’s OH&E initiatives are followed.

Ensures the crew, including himself, follow the Company’s Behavioral Rules and Obligations when working offshore.

Ensure food Storage procedures (FIFO) are followed and he understands fully HACCP2000 principles.

Environment and Waste Disposal regulations regarding waste segregation and garbage disposal at sea in accordance with client and rig procedures and regulations that comply with Malaysian Garbage Disposal legislation.

Operating Galley and Kitchen equipment on board.

Workplace Safety (JSA’s: Hazard Identification Processes: Active participation in the Stop card program and enforcing all Job Safe procedures).

As guardian of Bayongs contract, the Chief Steward ensures adherence to all contractual obligations and expectations to ensure compliance with all procedures as well as client expectations.

Is responsible for his own safety and that of others under his care.

Other duties as required and expected.

In addition to that, and with the backup and support of our clients, other development programs like OJT (On the Job Training) have been established as a means for those with the interest and the potential to enhance their progress to higher and more skillful positions on the deck to the benefit of themselves, the Company and the Client.

As a result, Bayong's Mission and Primary Goal is to not only become the preferred choice in the provision of Offshore Manpower by supplying the Right Man for the job, but also to take the lead in its provision of Catering and Janitorial Services in South East Asia.
