Pastry Chef (patissier)

Ghost restaurant in Berawa, Bali is looking for CHEF DE PARTIE PASTRY to join our team. Full-time position available.

Responsibilities:

1. Assisting the head chef in developing menu and additional items to season, supply, relevance and inspiration.
2. Providing suggestions with regards to recipes, techniques and any other ideas.
3. Documenting all food production in a standard recipe.
4. Providing feedback with regards to the functionality and appeal of the dishes in their department.
5. Ensuring that all food produced in their department is equal to or above the minimum set standards.
6. Ensuring that all food in their department is produced to the standard recipe.
7. Ensuring astute portion control, wastage control and adhering to par levels in their department.
8. Minimising energy waste in the kitchen.
9. Minimising maintenance costs in the kitchen by treating all equipment with respect and only using it according to guidelines and training.
10. Ensuring productivity in their department.

Requirements:

1. Passion for wood-fired cooking and a strong understanding of the techniques involved.
2. Proven experience in a leadership role within a professional kitchen, with a focus on wood-fired cuisine.
3. Creativity and vision to drive culinary excellence and menu innovation.
4. Ability to work effectively in a team environment and lead by example.
5. Strong work ethic and attention to detail.
6. Adaptability and a positive attitude.
7. Fluent in English.
8. 2+ years experience in a similar role.
9. Must have experience working in a restaurant.
10. Immediately available to start.
