The Dog and Fox, a renowned 25-bedroom boutique hotel in the heart of Wimbledon Village, is seeking an enthusiastic
Senior Sous Chef to join our kitchen team. With a strong focus on fresh, seasonal ingredients, banqueting for weddings, and creating memorable dining experiences, you'll play a key role in ensuring the smooth running of our kitchen operations.
Key Responsibilities:- Assist the Head Chef in leading and managing a large kitchen team, ensuring consistency, quality, and efficiency across all areas of food production.
- Oversee the preparation and delivery of breakfast, lunch, dinner, and banqueting services, including weddings and private events.
- Prepare and cook fresh, high-quality dishes in line with our seasonal menu and guest preferences.
- Maintain impeccable food safety standards, including health & safety compliance and hygiene practices.
- Manage stock levels and food ordering, ensuring minimal wastage and maintaining budget control.
- Work closely with the Head Chef to develop new menus and seasonal offerings, keeping the culinary experience fresh and exciting.
- Ensure smooth service, particularly during high-pressure events like weddings and large banquets, by coordinating with the front-of-house team.
- Provide training and development for junior kitchen staff, maintaining high morale and standards within the team.
- Assist with maintaining kitchen equipment and keeping the working environment organized, clean, and safe.
Requirements:- Proven experience as a Senior Sous Chef or Sous Chef in a fresh food-focused kitchen, ideally within a hotel or banqueting environment.
- Experience managing and motivating a large, diverse kitchen team.
- Strong background in banqueting and events, with the ability to deliver high-quality food for weddings, private functions, and corporate events.
- A keen eye for detail and a commitment to delivering consistently excellent food to our guests.
- Knowledge of food safety systems and relevant certifications (e.g. HACCP, Food Hygiene).
- Strong organizational skills, able to manage multiple tasks in a fast-paced environment.
- Excellent communication skills and a collaborative, positive approach to leadership.
- Ability to thrive under pressure and work efficiently during peak service times.
