As a Sous Chef, you are responsible for planning and directing food preparation within the kitchen. Working alongside the Head Chef you will manage the daily kitchen activities, including overseeing staff, aiding with menu preparation, ensuring food quality and freshness, and monitoring ordering and stocking levels. You will provide meal quality and consistency by following designated recipes and practices.
Main responsibilities:
- To report directly to the Head Chef and follow all instructions given by Head Chef or General Manager.
- To support with the training, development and coaching of Kitchen staff in all areas of job role in line with specific Job description and SOPs.
- To work closely with the Head Chef in order to meet business objectives and KPIs.
- Work with the Head Chef in setting meaningful and challenging KPIs and objectives for staff to maintain and improve service performance and quality.
- Keep abreast of changes in legislation affecting the sector which could impact on the business, communicating these accordingly and putting plans in place to implement necessary changes.
- To work closely with Head Chef to ensure staff recruitment, conduct and performance management policies and processes are strong and followed by all staff.
- To support the Head Chef with the preparation and implementation of standard operating procedures across all areas of site operations.
- To ensure staff fully understand and adhere to established codes of practice.
- To support Head Chef with the organisation and monitoring of staff schedules/rotas and act accordingly on any issues identified.
- Control and direct the food preparation process and any other relative activities.
- Construct menus with new or existing culinary creations ensuring the variety and quality of the servings that are agreed by Head Chef.
- Cost new menu items to agreed and targeted GP%.
- Maintain the set wage % by effectively using the internal company management tools, resources and systems.
- Maintain the food revenue GP% that is agreed and targeted.
- Approve and “polish” dishes before they reach the customer.
- Maintain and improve customer expectations.
- Plan orders of equipment or ingredients according to identified shortages.
- Arrange for repairs when necessary following correct SOPs.
- Remedy any problems or defects following correct SOPs.
- Oversee the work of subordinates within your working zone and act accordingly on any underperformance/conduct concerns.

- To attend daily, weekly and monthly management meetings when requested.
