Colicci is a family-run hospitality brand, proudly serving London’s iconic green spaces. Our cafés are bustling community hubs, offering exceptional coffee, fresh food, and warm hospitality.

We’re looking for an experienced and strategic Operations Manager to oversee our South East London sites, ensuring operational excellence, team leadership, and outstanding customer experiences. You’ll be responsible for driving performance across multiple locations, leading General Managers and Head Chefs, and ensuring high standards, efficiency, and ultimately profitability.

What You’ll Be Doing:

  • Overseeing all South East London sites – ensuring smooth operations, consistency, and high standards across multiple locations.
  • Leading & mentoring General Managers & Head Chefs – fostering a strong leadership culture and ensuring team success.
  • Driving operational excellenceoptimising processes, improving efficiencies, and maintaining exceptional customer experiences to reduce costs and drive revenue.
  • Collaborating with the Group Development Chef – ensuring food quality, innovation, and menu execution align with Colicci’s vision.
  • Managing financial performance – monitoring budgets, costs, and revenue, ensuring profitability across all sites.
  • Implementing and upholding brand standards – maintaining consistency in service, product quality, and customer experience.
  • Leading recruitment, training & people development – ensuring sites have strong, motivated, and engaged teams.
  • Ensuring excellence in hygiene & safety – maintaining the highest food hygiene, safety, and operational standards.
  • Driving customer engagement & experience – ensuring that every site delivers a warm, welcoming, and memorable visit.
  • Champion Colicci’s sustainability initiatives - across all sites, ensuring environmentally responsible practices are embedded across the entire operations.

What We’re Looking For:

  • An experienced hospitality leader – with a strong background in multi-site operations within cafés, casual dining, or premium hospitality.
  • A strategic and hands-on operator – equally comfortable analysing business performance and rolling up your sleeves on-site.
  • A strong team developer – passionate about mentoring General Managers and Head Chefs, helping them to grow and succeed.
  • A commercially savvy leader – with a track record of driving revenue, controlling costs, and improving operational efficiencies.
  • An outstanding communicator & collaborator – working closely with the Senior Management Team to drive success.
  • A results-driven mindset – with the ability to problem-solve, innovate, and adapt in a fast-moving hospitality environment.
  • A flexible & adaptable approach – comfortable managing multiple sites, working to business demands, and supporting teams when needed including at weekends and holidays.
