SALARY: £28,000 - £40,000, depending on experience and working hours

START: ASAP

LOCATION: Billingsgate Market (Office Based)

Fish Cutter / Fish Filleter Main Responsibilities

1. Ensure the correct product, quantity is prepped and packed as per the customer order and specifications
2. Check the quality and best before dates are acceptable. Report any issues to your manager
3. Ensure that no poor quality products are dispatched
4. Ensure that all paperwork is correctly completed
5. Ensure the boxes are clearly and correctly labelled
6. Ensure that the block area is left clean, debris free and organised at the end of the shift
7. Keep knives and equipment clean and suitable for food production
8. Ensure that there is adequate handover to the next shift
9. Report any H&S and food safety concerns to a manager immediately
10. Work with and support other departments and managers as part of the team
11. Attend team and company meetings as required

Health and Safety

1. All operational areas comply with health and safety regulations
2. The correct PPE must be worn at all times which the company will provide
3. Health and safety records are kept up to date

Food Safety

1. All necessary paperwork is completed from a food safety perspective, i.e., temperature checks, packaging reviewed, traceability procedure followed, batch dates included where applicable.
2. The correct Food safety PPE must be worn, which the company will provide.
3. Ensure that all products are rotated in a FIFO stock rotation system.
4. Role requires minimum obtaining Food safety level 2
5. Ensure that any use by and out of date products are removed from sale, placed in quarantine location immediately

Fish Cutter / Fish Filleter Ideal Candidate

1. Experienced of working in a chilled & frozen environment
2. Experience of working as a block person / fishmonger
3. Good understanding of food production, warehouse & transport environments
4. Ability to work with Fresh fish / food products
5. Good numerical skills and attention to detail
6. Good people skills to work with the team
7. Flexibility to adapt to changing requirements
8. High levels of personal hygiene
