Job Summary
An established care home, situated in Hebburn, New Castle, is looking for a full-time Kitchen Assistant.
Salary: Market rate
Hours: Full-time, 30 hours/4 days
Location: The Old Vicarage, Witty Avenue, Hebburn, Tyne and Wear, NE31 2SET.
Purpose of the Role:
- To assist the cook in preparing nutritious, balanced meals consistent with the needs and choices of the service users.
- To maintain a high standard of cleanliness in the kitchen, storage areas, and dining rooms.
- To keep food free from harmful bacteria and disease.
- To ensure that cross-contamination and cross-infection are prevented or minimized.
Personal Standards
- Appropriate clothing must be worn in the kitchen at all times.
- Long hair must be tied back.
- A clean uniform must be worn daily, and a plastic apron should be worn as required.
- No jewelry to be worn other than a wedding band and stud-type earrings.
- Nails must be clean, short, and free from nail varnish.
- Neither outdoor clothing nor outdoor shoes are to be worn in the kitchen areas. Change into uniform at work.
- The wash hand basin must always be used for washing hands – NOT the food or dish sink. Hands are to be washed with soap in running water.
- Smoking and eating are allowed in designated areas only.
Principal Duties and Responsibilities:
- To ensure that food hazard analysis is adhered to at all times to prevent problems occurring in the kitchen area.
- To check all food at the time of delivery for freshness and dates before storing.
- To store food as directed on labels.
- To report any defects immediately.
- To ensure that food is not stored in contact with water or non-edible ice.
- To allow air circulation between foods.
- To store cooked/uncooked foods apart to stop cross-contamination.
- To cover and label all containers.
- To check required temperatures regularly.
- To store dry foods at least 45cm off the floor.
- To ensure that food is not stored under sewer or water lines or against damp walls.
- To store all cleaning products well away from food.
- To ensure that the freezers are defrosted regularly.
- To ensure that plates and bowls are handled from the bottom.
- To ensure that single-service utensils are not reused.
- To keep salt and pepper pots covered.
- To complete all cleaning rotas daily and sign.
Responsibilities
- To ensure that you hold a basic Food Hygiene Certificate or are prepared to receive training.
- To attend mandatory training sessions.
- To ensure that all required documentation is completed in a timely manner.
- To assist the cook in all aspects of menu planning and preparation of foods.
- To ensure that dishes are scraped and rinsed well before washing. Familiarize yourself with and understand the operating manual for the dishwasher.
- To ensure that all dishes are dishwasher dried or air dried – never wipe dishes with clothes.
- To ensure that cups and glasses are stored face down, and utensils with their handles facing out. Report damages and breakages to the Cook or Home Manager and do not use cracked or chipped crockery.
- To ensure that food is washed thoroughly in the correct sink and that hands are washed after cleaning foods. Keep washed and unwashed foods separate.
- To ensure that you use color-coded chopping boards and knives appropriately.
- To ensure that you clean and sanitize utensils between processing different foods.
- To ensure that frozen foods are only thawed under the following conditions:
- In a fridge at 1 – 4°C
- Under fresh running water at 21°C
- In the microwave, if food will be cooked immediately
- To ensure that food is reheated and cooled as seldom and as quickly as possible.
- To ensure that food is kept hot or cold.
- To keep hands out of food and off eating surfaces.
- To ensure that edible ice is not used for storage.
- To store serving utensils properly between servings.
- To ensure that unwrapped food is not reused.
- To ensure that food temperatures are checked regularly.
- To ensure that you read and familiarize yourself with the Safe Food Better Business documents.
