Are you seeking your next managerial challenge in hospitality? This luxury boutique hotel in Alfriston, blending historic charm with modern elegance, is renowned for its exceptional service and diverse dining experiences, from casual breakfasts to fine dining dinners.

We are looking for an experienced and enthusiastic Dining Manager to oversee the daily operations of the dining services. This role is responsible for managing a team of approximately 18 full and part-time staff, ensuring the smooth running of service across breakfast, lunch, afternoon teas, cocktails, bar snacks, and dinner.

Working directly with the General Manager and Assistant General Manager, the Dining Manager will be involved in staff training, creating work schedules, and handling stock ordering. A combination of afternoon starts, evening closes, and the occasional breakfast shift is required to ensure consistent service quality throughout the day. While the typical workweek is 45 hours, paid overtime is available for additional hours worked. The restaurant typically serves 60 covers and can reach 80 when they are busier.

The role offers a competitive salary of £34,000 for those opting for live-in accommodation and £38,000 for live-out, with an additional 12.5% tips on top. On-road parking is available for live-out staff, and we offer the unique opportunity to work within a prestigious, historically significant hotel in one of Sussex's most scenic locations.

The ideal candidate will have previous experience in a similar environment and dining or a restaurant management role. Strong leadership and organisational skills are a must, along with a passion for providing outstanding customer service. Flexibility in working hours is key, with the ability to work across different meal periods to ensure seamless service.
