Rewilding Centre Cafe Chef!

Are you a passionate chef who loves working with seasonal, local Scottish produce? Do you thrive in a kitchen that values sustainability, creativity, and storytelling through food? If so, we have the perfect opportunity for you at the Dundreggan Rewilding Centre. Nestled in the heart of the Highlands, the Rewilding Centre Café is a unique space where food connects people to nature. Our ethos revolves around fresh, well-made, and sustainably sourced ingredients, bringing Scotland's landscape to life through every dish. You will take ownership of the café kitchen, delivering exceptional dishes that reflect the rewilding ethos. From daily café offerings to special catered events, you will have the creative freedom to craft menus that celebrate the land.

Responsibilities:

  1. Oversee the day-to-day running of the Rewilding Centre café kitchen.
  2. Deliver the highest quality food that will continue to develop the reputation of the Rewilding Centre Café as a destination for great food that also represents the ethos of Trees for Life - Natural ingredients, seasonal, and sustainably sourced.
  3. Work with the Café Manager to develop and implement the overall rewilding café concept.
  4. Create menu items, recipes, and dishes that deliver variety and quality in line with the overall vision of the Rewilding Centre - natural, seasonal ingredients, sustainably sourced.
  5. Prepare, cook, and support service of meals in the Café, including catered events.
  6. Ensure the menu caters for vegetarian, vegan, gluten-free, and other dietary requirements, including providing options to easily modify dishes for ad hoc customer requests.
  7. Ensure compliance with all health and safety and food safety regulations.
  8. Ensure the kitchen is clean, organised and adheres to hygiene regulations.
