The role of the Baker is key in the day-to-day running of the in-store Bakery at Fiveways.
The Baker will work as part of a team to ensure that fresh goods are produced, ensuring the smooth running of their department, work tasks, quality control, etc.
They are responsible for ensuring that Food Safety and Health and Safety regulations are adhered to at all times as they prepare pastries, cakes, breads, and other baked goods, using a variety of machinery such as mixers.
Due to the nature of the role, bakers may be required to work long hours and weekends.
Main Duties and Responsibilities
- Core Duties
- To prepare ingredients and measure portions.
- To maintain and ensure the smooth running of the bakery area.
- Produce all products according to recipe and method in metric, passing on new recipes and changes to colleagues.
- Ensure correct and fresh ingredients are used at all times.
- Using baking equipment and ensuring that all equipment is sanitary after use (ensure the cleaning sheet is completed).
- Ensure that all products are fit for sale at all times.
- Adapt to changes in product volume demand, responsible for increases or decreases in products needed for selling in store.
- Ensure all baking deadlines are met, prioritizing the daily baking schedules.
- Assist in stock control activities.
- Ensure products are consistent in taste and size at all times.
- Ensure department area is left clean, tidy, and organized at all times.
- Dispose of packaging according to rules and regulations.
- At the start and end of your shift, make out a schedule of work for the next day for the next person coming in, ensuring the smooth running of the department.
- At the end of your shift, leave a list of the products required for the management team.
- Health and Safety
- Adhere to the standards of presentation required for the department, including ensuring your whites are clean and tidy.
- Maintain the overall cleanliness of your department, area of work, and displays, carrying out daily cleaning duties and following a 'clean as you go' approach, cleaning up any spillages and ensuring there are no obstacles on the shop floor.
- Ensure all Health & Safety procedures are effectively carried out and report any concerns to your Line Manager, including the reporting of accidents.
- Follow all aspects of food handling regulations including labelling, product specifications, traceability, food hygiene, HACCP, and trading standards requirements.
- Ensure all fire exits and escape routes are kept free from obstruction.

- Actively participate in meetings as required.
- Attend required training and ensure a certificate of completion is forwarded to HR.
- Participate in appraisals and performance reviews to assess your overall performance, duties, training requirements, and development.
- General
- Provide support to your co-workers and work as part of a team with the other members of Fiveways staff.
- Be vigilant at all times to help minimize stock loss.
- Contribute to the continuing development of Fiveways Shop and Service Station.
- Contribute to the identification of your department's objectives for the short, medium, and long term.
- Enter and exit work from the front entrance.
- Clock in when entering work and out when leaving; clock out for breaks as soon as you leave the work station.
- Take appropriate time for breaks and ensure that you seek authorization from your immediate supervisor to go on break.
- Demonstrate confidentiality at all times.
- Undertake other reasonable duties as required by the company within the competency of the post holder.
