Role Overview

We are seeking a highly skilled and experienced Sous Chef to support our Executive Chef in leading a large-scale production kitchen. The ideal candidate will have a background in high-end catering, fine dining, or luxury hospitality, with a strong ability to manage high-volume food production while maintaining impeccable quality.

Key Responsibilities

  1. Culinary Excellence: Assist in the planning, preparation, and execution of high-quality, bespoke dishes tailored for private aviation clients.
  2. Production Oversight: Supervise and coordinate daily kitchen operations, ensuring efficiency in high-volume food production.
  3. Menu Development: Collaborate with the Executive Chef to create innovative, customized menus that cater to diverse client preferences and dietary requirements.
  4. Quality Control: Conduct regular inspections of food preparation, plating, and packaging to meet luxury aviation standards.
  5. Inventory & Procurement: Manage ingredient sourcing, stock control, and supplier relations to ensure premium quality ingredients and minimal waste.
  6. Compliance & Safety: Enforce food safety, HACCP, and hygiene protocols in accordance with aviation catering regulations.

Required Qualifications & Skills

  1. Experience: Minimum 5 years in a high-end catering, fine dining, or large-scale luxury food production environment.
  2. Leadership: Proven experience in managing kitchen teams in a fast-paced, high-pressure setting.
  3. Technical Skills: Expertise in modern cooking techniques, international cuisine, and dietary accommodations.
  4. Attention to Detail: Commitment to presentation, quality control, and precision in every dish.
  5. Flexibility: Ability to work in a fast-changing, high-demand environment with fluctuating production needs.
  6. Language: Fluency in French and English is preferred.
  7. Certifications: HACCP certification and professional culinary training (Culinary Arts Degree or equivalent).
