About the job
Based at Mandarin Oriental Lutetia, Paris within the Pastry Department, the Chocolatier reports to the Pastry Sous Chef.
As Chocolatier you will be responsible for the following duties:
- Responsible for the organization of your section, overseeing, supervising, and organizing the work of junior staff and apprentices, while actively participating in their training.
- Prepare chocolate products following the technical sheets created by the Pastry Chef (amenities, large chocolate pieces, participation in events such as the Chocolate Salon, Taste of Paris).
- Ensure the freshness and quality of products served to customers, and ensure the proper functioning and maintenance of workstations, equipment (e.g., tempering machine), and facilities (e.g., cold rooms, floors), in compliance with safety regulations and HACCP hygiene standards.
- Manage stock and orders, ensuring the availability and proper storage of products (following hygiene standards) to minimize waste (inventory of perishable and non-perishable items). Propose ideas, and participate in recipe creation, product selection, and the development of technical sheets in collaboration with the Pastry Chef.
As Sous Chef we expect from you:
- To have significant experience in a similar role in a high-end establishment.
- Be known for excellent interpersonal skills, flexibility, team spirit, organization, and attention to detail.
- Rigor, efficiency, and responsiveness are key strengths that help you fully accomplish your tasks.
- Possess excellent knowledge of HACCP hygiene regulations and safety standards.
