Job description

Design and create seasonal dessert menus featuring a variety of pastries, cakes, tarts, ice creams, chocolates, and confections.

Ensure that menu offerings accommodate dietary restrictions and guest preferences.

Source high-quality ingredients from reputable suppliers to develop innovative menu items that maintain stability for travel and display cases.

Research and experiment with new pastry techniques and international influences (e.g., French, Japanese, Indian), ensuring compliance with cost limitations.

Secure executive chef approval for special equipment and ingredient purchases.

Participate in the hiring, training, and supervision of pastry chefs to uphold the high standards set by the Executive Pastry Chef.

Maintain a clean, organized kitchen and ensure all equipment is properly maintained.

Foster a positive work environment and ensure staff adheres to timely production schedules.

Quality Control & Cost Management:

Conduct regular quality inspections to maintain the highest standards of product excellence and compliance with food safety regulations.

Monitor inventory levels and control costs by identifying opportunities for optimization.

Production & Presentation:

Oversee daily pastry production for operations, special events, and catering needs.

Develop creative plating techniques to enhance the visual appeal of desserts.

Work closely with the Executive Chef and culinary team to integrate desserts seamlessly into the overall dining experience.

Conduct regular staff training sessions on new recipes, techniques, and sanitation practices.

Manage staff scheduling to ensure full coverage, including handling shift changes due to illness and proper compensation.

Guest Engagement:

Interact with guests to gather feedback and address any concerns related to desserts.

Requirements

Salary: Starting at $70,000 with a 3-month probationary period, working directly with the Executive Chef to prepare for increased responsibilities.

Education & Experience: Completion of secondary education in pastry certification with 3-5 years of experience in a similar pastry shop setting.

Valid driver’s license required – occasional delivery driving may be necessary.

Legal eligibility to work in Canada – sponsorship through the LMIA program may be available for the right candidate.

Strong communication skills, problem-solving abilities, and professionalism.

Physical capability to lift up to 50 lbs.

Ability to work flexible hours, including weekends, holidays, and nights.

Clean legal record with no prior charges or engagements with law enforcement in Canada or internationally.

Fluent in English (written and spoken).
