Job Details

Kitchen Manager Job Description: Your responsibilities encompass the operations of the kitchen and back of house team. This position requires a positive, dynamic, passionate hospitality-focused style of professionalism.

Roles and Responsibilities

  1. As Kitchen Manager of Mirasol, you are expected to operate autonomously understanding that all responsibilities laid out below will not require motivation from senior management and will be acted upon accordingly as needed by you. That said, we are here to help and support when advice is needed.
  2. You are expected to report to and carry an open dialogue regarding daily operations, challenges, motivation, and team feedback to the Amabel Hospitality Group leadership team. Meetings will be scheduled to discuss operations weekly with management.
  3. Actively part of day-to-day operations of the kitchen.
  4. Ensure that all AHG standards are upheld to the high expectations of senior management. By practicing consistent messaging, training, correction, and follow-up in all facets of the operation.
  5. Ensure team members are educated, aware, and in compliance with all food safety and sanitation regulations.
  6. Monitor inventory levels of BOH products and ensure that par stocks are ordered as required and in line with respect to seasonal sales fluctuations.
  7. Consistently observe products received to ensure the correct and appropriate volumes of goods have been received. Returning and requesting credit on all incorrect products received.
  8. Observe and act on inventory that requires processing. This will ensure quality of products are being respected, overstock or currently unused items are being utilized in a manner that is in line with the Mirasol concept.
  9. Actively seek continuing education and inspiration to maintain a fresh and relevant perspective on modern and historical techniques, food trends, stewardship methods, and restaurant efficiencies.
  10. Under the supervision of senior management, aid in the development of new menus and or menu items and their infrastructure (e.g., food costing, food procurement, updating inventory sheets, recipe development, data entry, and team training).
  11. Set the example and train team members in the maintenance of a clean, organized, and efficient work space (dining room, kitchen, preparation, and storage area(s).
  12. Observe, report, and help to resolve or repair the operation and good keeping of all equipment and food handling areas. Report issues that need to be addressed to senior management.
  13. Practice constant and consistent team mentorship and training while overseeing and coordinating the food production timeline and high-quality preparation, cooking, and execution of service at all times.
  14. Work alongside senior leadership to accomplish budget goals set by ownership at AHG.
  15. Action and oversee BOH schedules and make payroll hour adjustments as needed. Observe and respond to changes in business volumes by adding or taking from schedules to be in line with labor cost targets.
  16. Ensure that all BOH employees are taking and punching out for breaks as required by the Employment Standards Act of Ontario.
  17. Hire, train, and mentor staff to AHG standards as required for the successful operation and growth of the careers of our team members and of the business as a whole.
  18. Actively practice clear, concise, and appropriate communications to the team through regular meetings, gatherings, and or shift announcements with regards to all information to do with operations, scheduling, events, menu adjustments/corrections, or guest feedback.
