Job Description:
The Food Service Manager is responsible for overseeing the entire food service department and clinical nutrition and food services. The RD will be assuming the role of Food Service Manager and will be responsible for the management of Food Services.
As a Head Chef, you will be responsible for:
- Planning and implementing the four-week menu plan following sections 62, 63, 64, 65, 66 & 67 of Community Care and Assisted Living Act: Residential Care Regulation.
- Maintaining a safe, clean and organized kitchen and storage area abiding by Health and Safety Regulations.
- Supervising and directing weekend Chef/Cook and Dietary Assistants/Kitchen Assistants.
- Ensuring compliance from other kitchen workers with standards, policies and procedures of The Mayfair, Residential Care Regulations and Safe food handling.
- Ensuring the kitchen runs on time with food prepared ready to serve following Community Care and Assisted Living Act: Residential Care Regulations.
- Planning, preparing, cooking and serving meals at lunch and dinner time following the four-week menu plan or having a substitute meal in place.
- Preparing meals for special diets (minced, puree, diabetic).
- Ensuring portion sizes are appropriate and requested, taking into consideration likes, dislikes and allergies according to individual nutrition plans.
- Ordering supplies weekly.
- Communicating with the Director of Care about any additional supplies needed in the kitchen (not food).
- Ensuring maintenance of equipment and promptly organizing for equipment to be serviced if broken.
- Maintaining a record of temperature control for fridges, freezers and hot water (dishwasher), and keeping a log.
- Maintaining a log for the fat trap maintenance and emptying.
- Conducting interviews with the Director of Care for possible candidates for the kitchen.
- Ensuring a safe and secure environment in the kitchen and dining room for staff, residents and visitors.
- Attending Occupational Health and Safety meetings once a month.
- Participating and completing mandatory training and education: WHMIS, Violence Prevention, Hand Hygiene, and Emergency Response.
- Participating in annual performance reviews for kitchen staff and self.
- Understanding the policies and procedures.
- Knowing where to find the policy and procedures binder.
- Understanding and following the infection control and Occupational Health and Safety policies.
- Understanding the complaint procedure and referring all concerns to the leadership team.
- Contributing to maintaining a positive, safe, home-like environment for residents, visitors and staff.
- Ensuring the safety of yourself and others within the workplace.
- Developing and maintaining excellent standards and workplace best practices.
Qualifications:
- Current qualification as a chef and in possession of a Food Service Supervisors certificate.
- Minimum of one year experience in front of house and customer service.
- Red Seal approved Chef Education (Preferred).
- Eligibility for membership in the Canadian Society of Nutrition Management as per section 44 (2) Community Care and Assisted Living Act: Residential Care Regulation.
- Experience, competence and training necessary to ensure that food is safely prepared and handled and meets the nutrition needs of the resident in care.
- Good written and verbal communication skills.
- Demonstrated good time management.
- Flexibility and ability to work independently.
- Physically and mentally able to perform duties for the above position.
- Shows a caring and considerate attitude towards residents, visitors and staff.
