Job Description
Every memorable dining experience at Fairmont Jasper Park Lodge begins behind the scenes with our culinary team’s commitment to safe, efficient operations and exceptional cuisine. As Second Cook, the care you devote to preparing each menu item will not go unnoticed by the guests who are fortunate enough to enjoy them!
Starting Rate: $18.73 per hour

What you will be doing:

  1. Reporting to the Executive Chef, responsibilities and essential job functions include but are not limited to the following:
  2. Consistently offer professional, friendly and engaging service
  3. Follow departmental policies, procedures and service standards
  4. Execute food items for a la carte and/or banquet menus according to hotel recipes and standards while assisting and overseeing production for relevant department
  5. Ensure the cleanliness and maintenance of all work areas, utensils, and equipment
  6. Have full knowledge of all menu items, daily features and promotions
  7. Control waste and spoilage in the assigned department
  8. Handle guest allergy concerns with appropriate care and importance by reporting to Chef De Partie
  9. Ensure proper labeling, dating and storage of all items in the kitchen
  10. Ensure a clean and safe working environment
  11. Consistently uphold a professional and well-groomed appearance in accordance with the company’s established grooming policy
  12. Adhere to the hotel’s vehicle handling and safety policies while driving hotel and guest vehicles
  13. Adhere to all hotel environmental policies and initiatives
  14. Follow all safety and sanitation policies when handling food and beverage
  15. Other duties as assigned

Qualifications
Your experience and skills include:

  1. 2 years kitchen experience required in fast pace and casual dining experience
  2. Completion of Alberta’s Food Handler Certification is required
  3. Solid knife handling and safety required
  4. Certification in a Culinary discipline an asset
  5. Valid Alberta driver’s license an asset
  6. Excellent communication and organizational skills
  7. Ability to work well under pressure in a fast-paced environment
  8. Ability to work cohesively with fellow colleagues as part of a team with minimum supervision
  9. Ability to focus attention on guest needs, remaining calm and courteous at all times

Your team and working environment:
Sitting – 0-1 hrs/day
Walking - 1-8 hrs/day
Standing - 6-8 hrs/day
Bending/Reaching - 1-3 hrs/day
Pushing/Pulling - 1-3 hrs/day
Physical Effort - required to lift up to 50lbs
Environmental Stress - High - works mainly inside, however outside work may be required

Visa Requirements: Must be legally eligible to work in Canada. The hotel is unable to assist candidates in obtaining Canadian work authorization.
