OVERVIEW

The Chef de Partie is responsible for supporting the resort's culinary team. The primary duty of the CDP is to prepare high-quality food to order for guests based on established guidelines, keep the work area clean and organized, and conduct him or herself in a positive professional manner. As a leader in our Culinary Department, you will be responsible for the smooth operation, coordination, and communication in all areas when on duty, taking initiative and being a positive role model.

DUTIES & RESPONSIBILITIES

  1. Assume daily responsibilities according to schedule and business needs.
  2. Preparation of Restaurant, Banquet, and any other food requirements.
  3. Requisitioning of food, beverage, and dry goods from the storeroom.
  4. Check daily food requirements and prepare them accordingly, including checking/initialing your Prep Checklist first thing when you arrive for your shift. This will give you a to-do list for your set up station. This must also be initialed by a chef on duty daily with a date.
  5. Ensure that refrigerators, freezers, working areas, and kitchen are kept clean.
  6. Ensure that equipment is functioning, sanitized, and that any maintenance is reported to Kitchen Management.
  7. Ensure strict control of waste and portion and help to control food quality and cost using standard recipe methods, syllabus, pictures, and maintain low inventory.
  8. Must never say no to a guest request without offering an alternative.
  9. Must comply with requests from departmental managers.
  10. Attend appropriate meetings.
  11. On a need basis: sweep, mop, wash down tables, and general cleaning to ensure a clean and sanitary workplace.
  12. Other duties as required.
  13. Will assist with the restaurant kitchen as well as the banquet kitchen.

SKILLS & QUALIFICATIONS

  1. A minimum of 5 years' experience in line cooking and fair knowledge of fine dining.
  2. Certificate or Diploma in Cooking would be an asset.
  3. Creativity.
  4. Organization.
  5. Self-motivated.
  6. Positive Attitude.
  7. Proven ability to work well under pressure as a supportive teammate.
  8. Able to remain on your feet for long periods of time.
  9. Moderate lifting is required within the kitchen.
