Peter Ballantyne Field Services is looking for a Camp Cook Supervisor who is responsible for managing the camp kitchen, supervising kitchen staff, and ensuring that nutritious, high-quality meals are prepared and served to campers and staff. This role also involves maintaining food safety standards, managing inventory, and creating meal plans based on the camp’s dietary requirements and schedule.
KEY RESPONSIBILITIES:
- Plan, prepare, and cook balanced meals for campers, staff, and guests according to a pre-established menu. Ensure meals are nutritious, well-balanced, and meet dietary restrictions.
- Lead, train, and supervise kitchen staff, including cooks, dishwashers, and other kitchen workers. Ensure that all tasks are completed efficiently and to a high standard.
- Develop and plan the camp menu based on the camp’s schedule, dietary needs, and budget. Incorporate a variety of meal options, including special dietary accommodations such as vegetarian, gluten-free, or allergen-free meals.
- Monitor food inventory, order supplies, and ensure that food and kitchen supplies are well-stocked and properly stored. Keep track of food costs and manage the camp's kitchen budget.
- Ensure that food safety regulations and hygiene standards are strictly followed at all times. Maintain cleanliness in the kitchen and food storage areas, and ensure proper handling of food.
- Oversee the serving of meals to ensure food is presented well, served on time, and meets the camp’s dietary guidelines. Ensure proper portion control.
- Monitor and accommodate specific dietary needs of campers, such as allergies or preferences, to ensure safety and satisfaction.
- Ensure that the kitchen, dining area, and food storage areas are kept clean and sanitized. Perform regular inspections of equipment, ensuring everything is functioning correctly, and arrange for repairs or replacements when necessary.
- Follow all local health and safety regulations and camp policies regarding food preparation, handling, and storage. Oversee compliance with safety guidelines related to kitchen equipment and cooking procedures.
- Coordinate with camp management, staff, and other departments to ensure meal schedules and special requests are met. Communicate with camp directors or event planners about special meal requirements for specific groups or activities.
- Provide training to kitchen staff on food preparation, cooking techniques, safety protocols, and camp policies. Promote teamwork, good morale, and efficient kitchen operations.
SKILLS & QUALIFICATIONS:
- Strong cooking skills, including experience with large-scale meal preparation and knowledge of cooking techniques and food presentation.
- Ability to supervise, motivate, and direct a team of kitchen staff, ensuring efficiency and quality in meal preparation.
- Excellent organizational skills for managing kitchen operations, inventory, and meal planning.
- A thorough understanding of food safety regulations, sanitation practices, and dietary requirements.
- Ability to work efficiently under pressure, managing multiple tasks and meeting deadlines, especially during busy meal times.
- Good interpersonal and communication skills to work with staff, campers, and other departments.
- Ability to adjust menus and meal plans based on availability of ingredients, dietary needs, or special requests.
- Several years of experience in a cooking or culinary role, with at least 2-5 years in a supervisory or management capacity. Experience in large-scale meal preparation (e.g., catering, camp kitchens, schools, or institutional food service) is preferred.
- A high school diploma or equivalent is required. A degree or certification in culinary arts, hospitality management, or a related field is preferred.
- Food Safety Certification (e.g., ServSafe) may be required, depending on local regulations.
The job involves standing for long periods, lifting heavy items, and working in a hot kitchen environment.
