Ensure food safety by implementing the prescribed temperature control requirements throughout the Catering Unit, not permitting food to be exposed to temperature abuse and monitoring personal hygiene and work of staff on the shop floor.
Key Result Areas:
1. Ensure safety of cooked food by monitoring and enforcing temperature and time regulations at different stages of food production.
2. Ensure safety of raw vegetables and fruits by supervising the sanitization process and conduct spot checks at frequent intervals.
3. Exercise vigilance to prevent the cooked food from being exposed to temperature abuse before passing to the next processing stage.
4. Checks the food temperature after blast chilling and follows the food into the cold storage, directing the transport of the food in the least possible time.
5. Records temperature of food on a journey (in aircraft) by means of a temperature logger. S/he is also required to carry out any temperature monitor surveys as required.
6. Monitor and control the handled thermometers including calibration and filing of relevant documents.
7. Monitor personal hygiene practices of staff and advise them in case of non-compliance to hygiene regulations reporting major defaults to the Food Safety Specialist on duty and/or the Asst. Vice president Hygiene & Safety. Additionally, investigate and report any particular hygiene concern on the request of senior Hygiene Staff.
8. Supervise and advise Food Safety Assistants on Hygiene related matters on a daily basis.
9. Monitors the standards of housekeeping in the company and interacts with the cleaning function for improvements.
10. Apply the Quality Policy and Quality System established in accordance with ISO 9001: 2000 international standards and execute all responsibilities according to the department work procedures while reflecting EKFC Quality Policy.
A level or equivalent qualification preferably with a background in science. Should have cleared the Intermediate level of Food Hygiene & Safety Course and completed all necessary professional/operational training at advance level.
Skills: Should have excellent communication skills. Should be fluent in written and spoken English Language. Should be agile and physically fit.
