A little taste of your day-to-day:

  • Hands-on management of the daily service of the hotel restaurants – Choix and Pierre’s.
  • Overseeing the implementation of service and brand standards.
  • Sharing recommendations and guest feedback with the Head Chef and F&B Management team.
  • Developing and implementing a promotions calendar for F&B products and events.
  • Conducting competitor analysis and staying informed about local market initiatives.
  • Managing outlets costs in line with management guidelines.
  • Analysing food and beverage statistics using the point-of-sale system.
  • Monitoring restaurants performance through guest feedback analysis and financial results.
  • Assisting in maintaining and enforcing procedures to ensure the security of funds, credit, and financial transactions.
  • Managing the timely replenishment of supplies, inventory, and uniforms while minimising waste and controlling costs.
  • Ensuring all restaurants equipment is operational and regularly cleaned.
  • Overseeing budgeting and forecasting.
  • Enhancing the guest experience through high-quality food and service.
  • Ensuring compliance with the company’s Fire, Life, and Safety requirements, including food safety and hygiene standards such as Hazard Analysis and Critical Control Points (HACCP).
  • Managing P&L, including productivity and cost control.
  • Acting as a role model for company values and core purpose.
  • Driving effective departmental communication.
  • Working closely with the Sales Team and Marketing Team.
  • Follow and implement IHG and hotel-specific policies and procedures.
  • Maintain professional working relationships with the hotel team, the corporate office, ownership, and Chef Pierre Gagnaire.
  • Perform other duties as assigned.

What we need from you:

  • Minimum of 3 years’ management experience, including at least one year managing a high-end, Michelin-starred restaurant specialising in French cuisine.
  • Strong leadership and excellent communication skills.
  • A bachelor’s degree in Hospitality Management, Business Administration, or a related field is preferred.
  • Excellent communication and interpersonal skills to collaborate with colleagues, engage with guests, and coordinate with other hotel departments.
  • Ability to remain calm and think clearly under pressure.
  • Willingness to learn with an open-minded approach.
  • Passion for food and a curiosity for new culinary experiences.
  • Financial acumen, including budgeting, forecasting, and P&L analysis.
  • Knowledge of food safety and hygiene standards, including HACCP regulations.
