Duties and Responsibilities:
Directly responsible for all kitchen functions and operations including food purchasing, preparation, maintenance of quality standards, sanitation, and cleanliness.
Responsible for the training of employees in methods of cooking, preparation, presentation, plate presentation, portion control, cost control, and sanitation and cleanliness. Provide a positive and enthusiastic environment.
In charge of hiring new staff and ensuring that the company standards are upheld, with every order looking as good as the first order to the last order that comes out of the kitchen.
Monitor food cost, waste, and employee hours to optimize profit for the company and create the best dining experience.
Make all kitchen reports, including weekly inventory, ordering, par level, and par stocks update versus daily sales. Prepare monthly profit and loss reports and daily time records of the staff for payroll.
