Job description

We are seeking a talented and passionate Italian Junior Sous Chef to join our culinary team at Rixos Marina Abu Dhabi. As a Junior Sous Chef, you will work closely with the Executive Chef and Sous Chef to ensure the highest standards of Italian cuisine are maintained, delivering exceptional dining experiences for our guests. You will oversee kitchen operations, guide and mentor junior staff, and help create innovative Italian menus that reflect authentic flavors with a contemporary twist.

Key Responsibilities:

  1. Menu Creation & Planning: Assist in designing and executing Italian-inspired menus incorporating traditional and modern techniques and using fresh, high-quality ingredients.
  2. Kitchen Management: Oversee daily kitchen operations ensuring all culinary activities are running smoothly and efficiently, maintaining organization and cleanliness at all times.
  3. Team Leadership: Supervise, mentor, and train junior kitchen staff providing guidance and fostering a collaborative work environment.
  4. Quality Control: Ensure all dishes are prepared to the highest standard of taste, presentation, and quality, adhering to hotel policies and health standards.
  5. Food Safety & Hygiene: Maintain the highest levels of hygiene and cleanliness in the kitchen, ensuring compliance with all health and safety regulations.
  6. Stock & Inventory Control: Monitor inventory levels, assist in ordering supplies, and ensure proper stock rotation to minimize waste and maximize efficiency.
  7. Guest Experience: Work closely with the front-of-house team to ensure guest satisfaction, handling special requests and dietary requirements as needed.
  8. Collaboration with Management: Work alongside the Executive Chef and Sous Chef in planning and executing special events, promotions, and seasonal menus.
  9. Cost Control: Assist with controlling food cost by ensuring proper portioning and minimizing food wastage while maintaining quality.

Qualifications:

  1. Proven experience as a Junior Sous Chef or similar role with a strong focus on Italian cuisine.
  2. In-depth knowledge of Italian culinary techniques, ingredients, and flavors.
  3. Culinary degree or equivalent training from a recognized institution.
  4. Strong leadership and organizational skills with the ability to manage and motivate a team.
  5. Passionate about food and hospitality with a keen eye for detail and presentation.
  6. Excellent communication skills and the ability to work effectively in a team-oriented environment.
  7. Strong time-management skills with the ability to handle high-pressure situations.
  8. Knowledge of food safety and sanitation standards.
  9. Fluent in English; additional languages are a plus.
  10. Ability to work flexible hours including nights, weekends, and holidays as required.
