Job summary

A leading recruitment agency in Dubai is looking for an experienced Executive Chef to develop innovative menus and lead a kitchen team. This role requires solid experience in fine dining, excellent communication skills, and management experience. The ideal candidate should have a strong background in both Western and Asian cuisine and experience in cost management. This position offers a dynamic work environment in a reputable establishment.

Qualifications

  • 6-8 years of experience in a management-level position.
  • Experience in upscale fine dining or hospitality.
  • Solid knowledge in Western and Asian cuisine.
  • Good command of English.

Responsibilities

  • Work closely with Group Executive Chef on menu development.
  • Set priorities and delegate tasks to kitchen staff.
  • Manage food costs and labor costs.
  • Liaison between front and back of house.
  • Conduct daily kitchen meetings and manage special requests.

Executive Chef :
  • This role will work closely with Group Executive Chef in developing seasonal, innovative, and cost-effective menus whilst training the staff to execute the same.
  • Set priorities for the day, delegating tasks and assignments to kitchen staff and informing service staff, through daily meetings.
  • Establish weekly labor/payroll costs, and maintain at or below the budgeted amount.
  • Manage food costs and maintain at or below the budgeted amount
  • Acting as a liaison between the front and the back of the house staff to keep them abreast of the current menu and changes, as well as accepting and acting on feedback from the customers received either directly or via the waitstaff. Further, to communicate information on reservations and special functions from the front of the house personnel to the kitchen staff.
  • Maintenance of all equipment and monitor work performed by any outside company.
  • Establish a daily kitchen meeting for each service, new menu changes, special info., etc.
  • Organize and familiarize yourself with special menu requests on a daily basis.
Requirements:
  • At least 6-8 years of experience in management level
  • Experience in upscale fine dining restaurant/hospitality companies
  • Solid knowledge in Western and Asian cuisine
  • Creative, with excellent leadership and communication skills.
  • GCC experience is a plus
  • Good command in English
