ESSENTIAL FUNCTIONS
Food and Beverage service for residents, friends, and extended family during the day.
Presenting menus, answering questions, and taking chosen orders.
When responding to requests, it is essential to listen carefully, document the request if needed, ensure the request is fulfilled correctly, and confirm with the family member or visitor their request before proceeding.
Communicates requests to the Chef/sends orders to the Chef and serves the dish/s/ meal/s when ready.
Takes note of special dietary needs and guest preferences and can describe and explain the dish.
Responsible for bringing orders from the kitchen to customers, keeping beverages filled, following up with tables to see if their needs are still met, and clearing plates as they finish.
Takes care of beverage service and standard beverage setup for certain areas/ locations as per standard.
Replenishes and refills beverage minibars, coffee, and tea setup, fridges, and cooler boxes.
Prepares beverage orders and informs the House Manager and the PGM when any stock items are low.
Collects orders from stores and ensures correct par stock is always maintained.
Assists with inventory taking, prepares breakage list, and assists with requirements regarding the equipment store.
Set up tables for breakfast/lunch/dinner with the appropriate linen, crockery, glasses, and service utensils as per the set standard.
For larger gatherings with a buffet setup, ensure tables are set accordingly as per set standard and that enough crockery is available to service refills of food.
Responsible for polishing of cutlery and glass cleaning, separating those with any chips or cracks, which are to be handed over to the House Manager.
Folding of napkins and separating those with any damage and/or staining, which are to be handed over to the House Manager.
Ensuring condiments are filled, clean, and have appropriate service utensils. In the case of bottled condiments, ensure the production/expiry date is valid.
Ensure plates (dinner/side), soup bowls, dessert bowls, and/or plates are clean and free from any chips.
Prepare teas/coffees as per requirements, ensuring sufficient cups/saucers/spoons and/or glasses are available.
Refresh teas/coffees as requested, particularly if they are prepared in pots to ensure they remain hot and fresh.
Ensure all flowers and decorative items are fresh and clean.
Placing of cutlery and serving of food and beverages should always be from the left side if possible.
Clearing of plates and glasses should be from the right side.
If you must reach across somebody, always inform, and excuse yourself.
Clearing of tables, dirty crockery, cutlery, and glassware, being careful in transporting to the dishwashing area and stacking appropriately to prevent any damage.
Clear and sort all dirty linen for delivery to the laundry.
Serves/clears and manages room service orders.
Desired Candidate Profile
Proven experience in a 5* hotel environment.
Ability to accurately assess the quality and the upkeep of their work areas – stores, pantries.
Reliable with an ability to multi-task and work well under pressure.
Demonstrable aptitude in decision-making and problem-solving.
Working knowledge of MS Office.
Professional and friendly demeanor and offer timely assistance to customers to ensure that needs are met.
Attend meetings and training when required.
Accepts flexible work schedules when necessary to provide uninterrupted service.
Is well updated and possesses solid knowledge of all relevant policies and procedures related to the Food & Beverage related activities.
