1. Participate in dishwashing, garbage removal, silver polishing, pot washing or any other stewarding area as necessary in accordance with department needs (based on staffing or business levels!)
2. Ensure a safe and productive operation.
3. Assure compliance with Health Department standards.
4. Supervise and maintain the sanitation of kitchen, storerooms, hallways, dock, and equipment.
5. Must assist in the training of all stewarding duties.
6. Assist in keeping updated with all items on the communication board and communicate to colleagues when required.
7. Assist in maintaining that all colleagues are following the proper grooming standards.
8. Ensure proper pass off to other leaders using logbook.
9. Check BEO’s – see what setups are needed to be done on shift.
10. At start of shift – do a complete walkthrough of stewarding areas to observe the status of all areas.
11. Throughout the shift – continuously walk through all areas.
12. Assist in re-assigning colleagues during shift to areas of need.
13. Responsible for answering Stewarding Phone and assisting all operations with requirements.
14. Assist in controlling stocks for daily use in the department (cleaning products, mop heads, etc.).
15. Assist in controlling breakage and waste.
16. Assist in maintaining cleanliness of all kitchens and HOH areas as well as ensuring all maintenance needs are looked after.
17. Ensure all paper towel dispensers are always full throughout the shift.
18. Conduct shift briefing when required.
19. Perform daily checks on staffing level, quality control, and maintenance.
20. You will adhere to the Hotel’s Hygiene and HACCP standards and ensure its Standard Operating Procedures and Requirements are fully met.
21. Maintain regular attendance at department and operations meetings.

1. Strong – sometimes you’ll need to lift, push and pull big objects up to 50lbs (23 kg). This can involve bending and kneeling.
2. Literate – you’ll need a good grasp of reading, writing and basic maths.
3. Flexible – night, weekend and holiday shifts are all part of the job.
4. Compliant – as well as meeting local laws on food handling and serving alcohol, you’ll be above the minimum age required and fluent in the local language.
5. Articulate – a great communicator, you’ll be warm, welcoming and easy to talk to.
