An opportunity has arisen for a Chef de Cuisine to join our team in our upcoming Greek Restaurant at Jumeirah Marsa Al Arab. The main duties and responsibilities of this role are as follows:
Assist the Executive Chef and Executive Sous Chef in the supervision of all employees engaged in each particular kitchen.
Attend daily meetings with the Executive Chef, Executive Sous Chef, and all the other Senior Chefs regarding the updates for the day and review the list of tasks for the next two days.
Plan menus and compile recipes for food tasting to be approved by Executive Chef and/or the Executive Sous Chef.
Identify market needs and trends in terms of food for both hotel guests and the local market.
Establish culinary standards for the specialty of each kitchen.
Hold meetings with colleagues in each kitchen to discuss outcomes from the Chef’s meetings and address relevant issues.
During service periods, personally run the hot plate and assist as needed to ensure that the presentation and quality of food meet established standards.
Report any problems regarding machinery and small equipment failures to the Executive Chef/Executive Sous Chef and ensure necessary work is carried out by all kitchen colleagues.
Ensure that the daily log book is utilized, and complaints are reported immediately to the Executive Chef/Executive Sous Chef.
