Job Title: Assistant Head Cook - Indian & Continental Cuisine

Job Summary:
We are seeking a skilled and motivated Assistant Head Cook to join our dynamic culinary team in an offshore catering environment. The ideal candidate will have a strong background in Indian and Continental cuisine, with a passion for food preparation and presentation. You will assist the Head Cook in managing kitchen operations while ensuring the highest standards of food safety, quality, and hygiene.
Key Responsibilities:
- Food Preparation:
Assist in the preparation, cooking, and presentation of Indian and Continental dishes according to standardized recipes and specifications. - Ensure food is prepared in a timely and efficient manner, maintaining consistency and quality.
Kitchen Operations:
- Support the Head Cook in managing daily kitchen operations, including inventory management, food storage, and equipment maintenance.
- Collaborate with kitchen staff to maintain workflow efficiency and teamwork.
Menu Planning:
- Assist in the planning and development of menus that cater to the dietary needs and preferences of crew and guests.
- Suggest innovative dishes and adapt menus to reflect seasonal ingredients and trends in cuisine.
Food Safety & Hygiene:
- Adhere to strict food safety and hygiene regulations in the kitchen, ensuring cleanliness and sanitation standards are met.
- Monitor food storage and preparation areas for compliance with safety guidelines.
Training & Supervision:
- Train and supervise junior kitchen staff in food preparation techniques, cooking methods, and safety procedures.
- Assist in evaluating team performance and providing constructive feedback.
Cost Control:
- Assist in the management of food cost, portion control, and waste management to contribute to budgetary goals.
- Help with inventory control by tracking stock levels and reporting discrepancies to the Head Cook.
Qualifications:
- Culinary diploma or equivalent experience in a professional kitchen.
- Minimum 3-5 years of cooking experience, with a focus on Indian and Continental cuisine.
- Previous experience in offshore or catering environments is preferred.
- Strong knowledge of food safety standards and sanitation practices.
- Ability to work in a fast-paced environment and handle multiple tasks effectively.
- Excellent communication and teamwork skills.
- Creativity and passion for culinary arts.
- Flexibility to work on a rotating schedule and adapt to changing needs.
Physical Requirements:
- Ability to stand for extended periods and lift heavy items (up to 50 lbs).
- Must be able to work in varying temperatures and conditions typical of an offshore kitchen environment.
Compensation:
Salary will be 4,000 AED + other Benefits will be provided by company.
Interview Mode: Client interview in Kolkata on 28th March & 29th March in Mumbai location.
